Kath's Caramel Popcorn

This caramel corn is AMAZING! I seriously LOVE it! My mom made it all growing up and it is a family favorite! She got this recipe from her cousin Kath. It is easy to make and it is the perfect time of year to make it.

Here are the ingredients: 2 cups of brown sugar, 1 can Eagle Brand milk, 1 cup butter,1 cup of Karo syrup, and 1 1/2 cups of popcorn kernels.

Pop 1 1/2 cups of popcorn kernels in a popcorn popper. Once popped it should fill 2 big bowls. Try to pick out the kernels that don't pop as you go. Set the popcorn aside while you make the caramel. Yum!

Melt the butter, brown sugar, and karo syrup in a saucepan.

Bring first 3 ingredients to a boil. Boil until the temperature reaches 240 degrees F or a softball stage.

It should look something like this... Once it is hot enough, remove from heat.

Add the Eagle Bran Milk and stir to combine.

Pour evenly over all the popcorn. Sometimes I split the popcorn into 3 bowls to make it easier to mix up. You can make these into popcorn balls or just eat it straight out of the bowl. Either way, it is delicious!

Here is a close up. I promise it is even better than it looks! Enjoy!

Marty's Raspberry Jello Dessert/ Salad

I never know if I should call this a salad or a dessert. It tastes like a dessert to me but I have heard to it referred to as a salad....because there's Jello in it? I am not sure. Either way, it is delicious! Some of my friends have been asking me to post this for a while now and I am finally getting around to it. It is fairly easy and very delicious! Just make sure you have some time when you make it because it has to set in the fridge for a couple of hours! I hope you love this as much as I do! Enjoy!

Here are the ingredients: frozen raspberries (yum!), pretzels, sugar, butter, cool whip, cream cheese, and raspberry jello.

For the first layer you need to crush up pretzels until you have 1 1/2 cups of crushed pretzels. I like to crush them in a handy thing like this but I have also just crushed them by sticking them in a zip-loc bag and hammering them.

Next you melt a cube of butter. Add 1/2 cup white sugar and the crushed pretzels to the melted butter and mix it around with a fork.

Dump it into a greased 9x13 pan and spread it around until the pretzel mixture is evenly spread. Bake it at 350 degrees for 6-8 minutes.

When it comes out it should look something like this! Not too different from the last picture but the sugar, butter, and pretzels are sticking together better now. Let it cool before adding the next layer to it.

Now we can move onto the 2nd layer. For this layer you need to soften 8 oz of cream cheese. Then mix it together with 1/2 cup of sugar and 1- 8 oz container of cool whip. I usually mix it with a mixer.

It should look something like this after you mix it up!

Spread it onto the pretzel mixture once the pretzel mixture has cooled. Refrigerate it until it is cool. I usually just stick it in the fridge for 10-20 minutes. It depends on how much time you have while making the dessert/salad.

It's time for layer #3. For this layer you dissolve 6 oz of Raspberry Jello into 2 cups of boiling water. Remove from heat and immediately add 1 bag or 2 boxes of frozen raspberries. Stir it around until the raspberries are not sticking together anymore.

Then pour the raspberry mixture on top of everything else. Refrigerate for around 2 hours or until the Jello is firm.

Then you serve it! You will love it and will want to eat more than one piece for sure! I can't get enough of it whenever I make it! I hope you love it too!

Marty's Raspberry Jello Salad/Dessert

Ingredients:

Crust:
1 1/2 cups of crushed pretzels
1/2 cup of sugar
1 cube of butter

Press crust into greased 9x13 pan. Bake at 350 degrees for 6-8 minutes. Cool.

2nd Layer:
8 oz of softened cream cheese
1/2 cup of sugar
8 oz of cool whip

Cream together and spread on crust. Refrigerate until cooled.

3rd Layer:
Dissolve 6 oz of Raspberry Jello in 2 cups of boiling water. Add 1 bag or 2 boxes of unsweetened frozen raspberries. Refrigerate until Jello is firm.

*This is best if you make the Raspberry Jello layer the day you plan to eat it! Enjoy!

Strawberries, Ice Cream, & Rice Krispies Dessert

Okay, so I LOVE Rice Krispie Treats. And when I heard this dessert had Rice Krispies, AND ice cream, AND strawberries....I was instantly interested. Did it disappoint me in the least?? Definitely not. I liked it more, the more I ate it...which could potentially be a bad thing...
One of my co-workers accidentally left this recipe on our computer at work and I stole it and made it. It is easy. It is delicious. Give it a try while it's still warm outside! I didn't do step by step directions for this one but they might show up in the near future.

Ingredients:

1 cup Brown Sugar
1 cube Butter
2 cups Rice Krispies (generic works too)
1/2 gal Vanilla Ice Cream, sliced
Sliced Fresh Strawberries (mixed up with a little sugar!)
Chocolate Syrup

Directions:

Heat butter and brown sugar on med/low. Stir in rice krispies. Spread the mixture on the bottom of a well greased 9x13 pan. Place the sliced ice-cream on top of the rice krispie mixture, filling the pan. Freeze at least 1 hour. Remove 5 minutes before serving. Top with strawberries and chocolate syrup if you want. My family likes it with chocolate syrup. I prefer just the strawberries. Try either one or both! Enjoy!

Raspberry Cream Pie

Raspberry Cream Pie. YUM! I made this twice this last week because it was SO good. I found it on the Pioneer Woman's Website and had to try it. I love raspberries and I love oreos so it seemed like the perfect combination! It is especially nice to eat in the summer time because you freeze it. (However, I liked it best when it had been in the freezer for a couple of hours but before it was completely frozen.) I also added extra Oreos on top because you can never get too many Oreos in one dessert! Anyway, try it, eat it, and love it. Enjoy!

Muffins That Taste Like Donuts

Okay so I found a recipe for these muffins the other day and made them. They were delicious! The name of them was what really piqued my interest but they really are delicious! They are also easy. This was actually my first attempt at making homemade muffins and they were much better than any muffins I have ever had from a box. I got them from the Tasty Kitchen Website. For the recipe click here. Enjoy!

Apple Snickers Salad

Okay so this is a super easy and delicious salad that I love! I made it the other day and this salad was a hit with everyone that tried it. It is not exactly on the healthy side...but it does have apples, so it is not totally unhealthy either! Here are the 3 simple ingredients: Apples (any kind), Snickers Candy Bars, and Cool Whip.

First, chop up 5-6 apples into bite sized pieces.

Put them into a bowl...

Unwrap a bag of mini-sized FROZEN Snickers. Put them into a large Ziploc bag and crush them with a hammer. If they are good and frozen this will work better!

Add the chopped up snickers bits and the 8 oz container of cool whip to the apples and stir together.

It should look something like this when done! And it will be delicious! This salad is best when eaten soon after making. Enjoy!

Apple Snickers Salad

Ingredients:

5-6 Medium Sized Apples
1 Bag of Mini Snickers Candy Bars
1 8 oz. Container of Cool Whip

Preparation Instructions:

Chop up the apples and put them into a bowl. Freeze the bag of Snickers. Unwrap each candy bar and put them into a Ziploc Bag. Smash the frozen Snickers with a hammer or with any heavy object. Pour pieces of Snickers into the bowl with apples. Add the cool whip and stir together. Enjoy!

Dana's BBQ Chicken Pizza

BBQ Chicken Pizza. Yum! Doesn't it look good?! I pulled this one out of the oven and cut it, but someone snatched a piece right out of the middle before I could even take a picture! Hopefully you can still tell how good it looks. This recipe is from my friend Dana. Dana made up this pizza and it is delicious! It is also super easy. Try it...I know you will love it!

First put 3 cups warm/ hot water into a bowl.

Add 1 Tablespoon of white sugar, 1 Tablespoon of brown sugar, and 1 Tablespoon of salt. Mix it together until they all dissolve in the water.

Sprinkle 1 packet of active dry yeast (or 2 1/4 tsp) on top. Let it sit for a minute or two, then start adding the flour.

Add the flour 1 cup at a time while stirring the mixture (with a big spoon) until you have 7 cups of good white flour.
Around the 6th or 7th cups toss out the spoon and knead the dough with your hands. Knead it for a minute or two and then put it in a greased bowl. Spray the dough with non-stick spray and cover it with saran wrap. Allow to raise in a warm place for 30 minutes to an hour. I usually let mine sit for an hour but Dana's recipe says 30 minutes. When the dough doubles in size you know it's ready to be made into a pizza. Preheat the oven to 350 degrees.
While waiting for the dough to rise it's time to cook the chicken! Dana uses chicken with bone in it for this pizza but I used boneless, skinless chicken and it tasted great! Put 3-4 thawed chicken breasts on a baking sheet. (I used too much when I made it here)

Pour olive oil and salt and pepper over the top of the chicken. Then put into the oven for about 20 minutes on 350 degrees. I usually just cut into a piece of the chicken to make sure it is good. Once the chicken has cooled shred it and set it aside until you are ready to put it on your pizza.

Slice one bundle of green onions. Cook about 12 slices of bacon until they are crisp. (Sorry there is no picture of the bacon!)

Cut the dough in half (this dough recipe makes two pizza's) and spread each half onto a greased pizza stone or onto a greased cookie sheet (like the one the chicken is pictured on above). I usually just spread it until it is covering whatever I am using to cook it on. It can take time so be patient while flattening the dough out! It will be worth it!

Spread BBQ sauce onto the dough. I use Sweet Baby Ray's Original BBQ Sauce and it is delicious!

Add the shredded chicken...

Add grated mozzarella cheese...I think I used about 3 cups for each pizza but it could have been more. Just use as much as you like!

Add the cooked, crispy bacon...I have used turkey bacon and it also tastes great on this pizza!

Now add the sliced green onions. Doesn't it look good? I think it looks delicious! Put pizza in the oven and cook for about 20- 25 minutes on 400 degrees.

And here it is! It really is SO good. Enjoy!

*If you think this pizza looks good, Dana has another great pizza recipe on her blog. Check it out here!

Dana's BBQ Chicken Pizza

The Dough:

3 cups of warm/ hot water
1 Tablespoon of white sugar
1 Tablespoon of brown sugar
1 Tablespoon of salt
1 Packet of active dry yeast 0r 2 1/4 tsp.
7 cups of good white flour

Mix together the water, sugars, and salt. Sprinkle the packet of yeast on top of mixture. Let it sit for 1-2 minutes and then start adding flour one cup at a time while stirring with a spoon. When you get to the 6th or 7th cup of flour toss out the spoon and start kneading it with your hands. Put the dough into a greased bowl and cover it with greased Saran Wrap. Let it raise in a warm place until the dough has doubled in size (30 minutes to an hour). Cut the dough in half and spread out onto two greased pizza stone's or cookie sheets. Add the toppings.

Toppings:

3-4 cooked chicken breasts
1 bottle of BBQ sauce
1 bundle of green onions
12 slice of bacon
6 + cups of mozzarella cheese

Spread BBQ sauce onto the dough. Shred the chicken breasts and then place the shredded pieces onto the BBQ sauce. Add the cheese, bacon, and then the green onions. Place the pizza in the oven and cook it for 20- 25 minutes on 400 degrees. Enjoy!

My Favorite Ice Cream

Okay so I know this is supposed to be a cooking blog with recipes on it, but I felt like it was my duty to tell everyone who ever comes across my blog about this ice cream! It is AMAZING! I came upon it one day at the grocery store and decided to give it a chance. I have always liked ice cream but I have never been overly obsessed with it, until I tried this flavor! It is vanilla ice cream with swirls of caramel and chunks of chocolate covered waffle cone. Sound good? It is even better than you are currently imagining it. It only comes in a smaller container (probably a good thing). I have found it at every grocery store that I have looked for it in. If you are looking for something to satisfy your sweet tooth, give this a try! I know you will love it! Enjoy!
